This sounded like it was a great talk.  I wonder if I could find out more from another article you may have written?  I must admit I’ve heard so many conflicting things about cholesterol, it is the health topic that confuses me the most as an acupuncturist.  How much fat should we all be eating anyway??  I’d also love to understand this better from a chinese medicine perspective too if you have any insight on that?  This is a great site that I just discovered.  Thank you!

    Hi Kristin,

Thanks for your comment and welcome to the blog. Are you local in the Bay Area? If so, you can sign up for email updates on the front page of my blog and you’ll be notified in the future when I offer that talk again. In the meantime, you can check out all of the articles I’ve written on cholesterol, selected offsite articles, and handouts from my cholesterol talk here.

Reading through those articles should answer your questions – except for the TCM perspective. Look for a future article on that.

In short, you should eat as much fat as you want, as long as it’s saturated. Avoid polyunsaturated omega-6 fat as much as possible, and eat a small amount (1.5-2% of total calories) of omega-3 polyunsaturated fat.
